Thanksgiving is upon us, which means hours spent on Pinterest searching for all “things” turkey and pumpkin! It’s the holiday that centers around food more than any other—and that can create a lot of anxiety for parents of children with type 1 diabetes.
Last year was our first year celebrating Thanksgiving keeping T1D in mind and I have to share a little about our menu, and to be honest, those Pinterest searches! (I searched there and beyond for months to find recipes!) I was determined that Gunnar would be able to eat the same food as everyone else, which meant finding the yummiest low carb options out there!
Since we will be cooking like this for the rest of our life, it just makes sense to put in the hard work now to find what actually WORKS, and what’s safe for him and his body to manage.
Well……I’m pretty sure we did it! And guess what the best part was!?!: There really are amazing food hacks out there for low carb healthy amazing meals! You just have to be willing to go for it!

If you’re anything like me, I love Family traditions! This year, after your meal, get outside and get your body moving. Throw around a football with the kids, go for a hike or bike ride. Or play an interactive game with the entire family. However you do it, get active! Exercise helps keep those blood sugar levels stable, and allows more opportunities for creating memories!
