What Does He Eat for Lunch?

That’s the question I often get regarding my type 1 diabetic teenager. You see, a few weeks upon diagnosis we discovered that we could manage blood sugars much more effectively with the low carb approach. And since then we’ve been searching for amazing low carb options and recipes for him.  

Today I want to introduce you to our favorite low carb bread.  I was initially quite overwhelmed when reading the recipe. I thought it would take too much time or be too difficult so I put it off. But another type 1 momma continued to encourage me to give it a try. Once I made it, I realized just how easy it really was. And the fact that my son LOVED it certainly made it worth it.
