As some of you may already know, my son Gunnar was diagnosed with type one diabetes in March of 2019. Shortly after his diagnosis, we discovered we could manage his blood sugars much more effectively through the low-carb approach<\/a>. So the search was on for healthy, yummy low-carb recipes. <\/p>\n\n\n\n

Everyone deserves to have healthy, delicious food in their life, so of course, my son is no exception. I get asked all the time for the recipes I use.  I have compiled a list of many favorite recipes I\u2019ve found in my search for tasty meals. They all fit into the low-carb lifestyle, they\u2019re all Gunnar approved, and we all enjoy them as a family. <\/p>\n\n\n\n

Low-Carb Breakfast Recipes<\/h2>\n\n\n\n

Breakfast is, of course, the most important meal of the day. You need it to have a productive and joyful day, but breakfast can be so dull. To fight against the breakfast blues, I use these recipes. They\u2019re all low carb, and most of them are easy to make, even in the early morning before school or work.<\/p>\n\n\n\n

Avocado, Egg, And Cheese<\/h3>\n\n\n\n

This breakfast is exactly what you think it is. It\u2019s kind of like eggs in a basket, but instead of bread, it\u2019s avocado. This is one of the diabetic-friendly recipes brought to you by my wonderful husband. I love it when he comes up with new meals for G.<\/p>\n\n\n\n

Just cut your avocado in half and remove the pit. Leave the skin on so you can bake it. Add the egg to the center hole, where the pit used to be, and cover it in your favorite cheese. All you have to do is bake it until your egg until it\u2019s cooked to your liking. This is an easy low-carb recipe to get your morning started.<\/p>\n\n\n\n

Keto Sheet Pan Pancakes<\/h3>\n\n\n\n

Here\u2019s the whole recipe<\/a>! These pancakes disappear in my house almost immediately after I make them. I\u2019m not kidding; half of the pan is gone before I can even bring it to the table. They\u2019re so good; you won\u2019t even think about using syrup.<\/p>\n\n\n\n

I recommend using parchment paper with this recipe<\/a> for a much easier clean-up. Dump the batter onto the baking sheet and add your toppings. I make half the sheet with blueberries and the other half with Lily\u2019s low-carb chocolate chips so everyone in my family will be happy, but you can use any toppings you want.<\/p>\n\n\n\n

Chaffle Egg Sandwich<\/h3>\n\n\n\n

Chaffles are a pretty well-known low-carb food fad right now, but just in case you don\u2019t know what they are, here\u2019s a recipe for them<\/a>. They\u2019re waffles made out of eggs and cheese! They\u2019re very low-carb, and they don\u2019t taste the way you think they would; they\u2019re better.<\/p>\n\n\n\n

But the recipe isn\u2019t about the chaffle. It\u2019s about the delicious breakfast sandwich you can make with them. You\u2019ll need two chaffles, two eggs, cheese, sausage, and bacon. Assemble your ingredients like you would with any other breakfast sandwich. It\u2019s quick and easy, so it\u2019s perfect for the early mornings when you\u2019re running a little late.<\/p>\n\n\n\n

Meat Lover\u2019s Breakfast Pizza<\/h3>\n\n\n\n

Meat lover\u2019s breakfast pizza is the last breakfast recipe because it\u2019s one of my favorites! It\u2019s the perfect Sunday morning breakfast that the whole family can get excited about. Here is the recipe for this breakfast pizza<\/a>.<\/p>\n\n\n\n

Of course, it\u2019s low carb and high protein. You\u2019re going to cover the crust in breakfast sausage, bacon, scrambled eggs, and loads of cheese. It only takes 15 minutes to prep and 15 minutes to cook, so in half an hour, you will have a low-carb breakfast ready to go!<\/p>\n\n\n\n

Low-Carb Dinner Recipes<\/h2>\n\n\n\n

Dinner options can be hard to find for many families because it seems many build every dinner on ingredients with a lot of carbs. However, our family has always made protein the center of each meal. This is the key to having success in the low-carb lifestyle. Think \u201cprotein up\u201d as you\u2019re preparing each meal.<\/p>\n\n\n\n

Creamy Taco Soup<\/h3>\n\n\n\n

Here\u2019s another low-carb recipe<\/a>. Are you sensing the theme? Each serving is packed with protein, and this is easily the creamiest soup you\u2019ll ever have. It\u2019s hard to imagine, but you might even like it more than actual tacos!<\/p>\n\n\n\n

Whenever you\u2019re craving tacos but don\u2019t want all the carbs that come with them, you\u2019ll be happy you have this soup recipe. It\u2019s everything that taco craving inside of you wants without all the carbs of a tortilla. Plus, you can freeze the left-overs and save them for later.<\/p>\n\n\n\n

Chicken And Dumplings<\/h3>\n\n\n\n

Gunnar and I used to make chicken and dumplings all the time before he got his diagnosis. Then, the dumplings were no longer able to fit in his diet until I found this recipe.<\/p>\n\n\n\n

All you\u2019ll need is 100g of almond flour, 1 tbsp of xanthan gum, and 6 tbsp of water. Mix them all together, and they will form a dough. Make sure your dough is chilled, and then roll it into balls. Drop them in your pot of boiling chicken and let it boil until they\u2019re cooked.<\/p>\n\n\n\n

For my chicken base, I just use water and a ton of bouillon cubes. Then I\u2019ll salt and pepper to taste. I don\u2019t know how much easier it could be!<\/p>\n\n\n\n

Chaffle Burger And Fries<\/h3>\n\n\n\n

I told you about the chaffle breakfast sandwich, so you had to have seen this coming. It\u2019s the chaffle burger. Make your chaffles like you usually would, but this time add some seasonings you would typically add to your burger to spice it up. Assemble your burger like you normally would; just replace the buns with the chaffles.<\/p>\n\n\n\n

Now, I bet you\u2019re wondering what fries I\u2019m talking about. Fries don\u2019t fit into the low-carb lifestyle right?  Wrong! You\u2019ll make these \u201cfries\u201d from the same recipe and ingredients the dumplings are made of.<\/p>\n\n\n\n

Again, you\u2019ll need 100g of almond flour, 1 tbsp of xanthan gum, and 6 tbsp of hot water. Form the dough into a ball, chill your dough, and then cut it into the shape of fries. Pan fry them on your stovetop but be careful! If the oil is too hot or they\u2019re left too long, they can burn.<\/p>\n\n\n\n

Other Low-Carb Recipes<\/h2>\n\n\n\n

Are you missing bread on your low-carb journey? You don\u2019t have to miss out anymore.  You can use most of these low-carb recipes in a variety of different ways. I encourage you to get creative with how you use them and don\u2019t forget to share how you use them with me!<\/p>\n\n\n\n

Buttery Lupin Flour Biscuits<\/h3>\n\n\n\n

First, it\u2019s important to say that you\u2019ll make these biscuits<\/a> with lupin flour made from a legume. Anyone with nut sensitivities should not try this recipe because legumes are related to peanuts. If you don\u2019t have a nut sensitivity, you\u2019re good to go!<\/p>\n\n\n\n

These biscuits are high in protein, and they only have about one net carb. You should do your own carb calculations as well, just in case the carbs in your ingredients vary. You can use these biscuits as a base for many meals, or you can use them as a side to your main dish. Either way, they\u2019re buttery and delicious. You\u2019ll want to make this one of your staple recipes.<\/p>\n\n\n\n

Rustic Faux-Wheat Bread<\/h3>\n\n\n\n

Don\u2019t be intimidated by the thought of making bread. It\u2019s a lot easier to do than you think. Plus, you may never buy another loaf of bread from the store ever again, and why would you? This bread<\/a> is so yummy. You just need to get a good bread pan, and you\u2019ll be able to make this low-carb bread whenever you want. It\u2019ll become a staple in your daily diet.<\/p>\n\n\n\n

The possibilities are unlimited when it comes to the toast, sandwiches, and grilled cheeses that you can make with this recipe. I recommend baking it for an hour at night after dinner and then turning the oven off. Do not open the door until the next morning! Let the bread cool in the oven, and you\u2019ll have a soft and flavorful loaf.<\/p>\n\n\n\n

One More Low-Carb Bread Recipe<\/h3>\n\n\n\n

Here\u2019s another bread recipe that is new in my life! Here\u2019s the whole recipe.<\/p>\n\n\n\n

1 cup of almond flour<\/p>\n\n\n\n

\u00bc cup of coconut flour<\/p>\n\n\n\n

2 tsp of baking powder<\/p>\n\n\n\n

\u00bc tsp or Himalayan salt<\/p>\n\n\n\n

1\/3 cup of melted butter<\/p>\n\n\n\n

12 large egg whites brought down to room temperature (or 1\u00bd cups of liquid egg white)<\/p>\n\n\n\n

1 \u00bd tbsp of monk fruit<\/p>\n\n\n\n

\u00bc tsp xanthem gum (this is optional, but it gives the bread a better texture)<\/p>\n\n\n\n

\u00bc tsp of cream of tartar (this helps with beating the egg whites)<\/p>\n\n\n\n

Preheat your oven to 325 degrees. Then, combine all of your dry ingredients, except the cream of tartar. Add it to a food processor and pulse. Add in the melted butter and pulse again. Some people have had success using their Ninja instead of a food processor.<\/p>\n\n\n\n

Separately, whisk your egg whites and cream of tartar until they form stiff peaks. I use my Kitchen Aid standing mixer to beat the egg whites until they are almost to the top of the bowl. That volume is why room temperature eggs are so important.<\/p>\n\n\n\n

Then carefully fold your dry ingredients into your egg whites. Once they\u2019re combined, place the mixture into your loaf pan. Don\u2019t forget to either oil your pan or use parchment paper, so it doesn\u2019t stick! Bake for 40 minutes, and then tent foil paper over the top and cook for another 35 minutes. Let the bread cool completely before taking it out of the pan.<\/p>\n\n\n\n

There\u2019s no yeast, and you don\u2019t have to let it rise. Just prep it and bake it. I promise you won\u2019t regret trying this recipe.<\/p>\n\n\n\n

Avocado and Brisket Salad<\/h3>\n\n\n\n

This salad will only take you about ten minutes to make, but it\u2019s packed with so much flavor. The amount of the ingredients you use will directly correlate to how much of the salad you want to make. If you want more of any of the ingredients, then add more! There\u2019s no way to mess it up.<\/p>\n\n\n\n

This salad is made of brisket, avocado, tomato, cumin, salt, pepper, lime juice, and half of a jalapeno. Cut up your brisket, avocado, tomato, and jalapeno into bite-size pieces. Don\u2019t forget to take the seeds out of your jalapeno if you don\u2019t want it to be too spicy. Mix them together, and then add the cumin, salt, pepper, and lime juice to taste.<\/p>\n\n\n\n

This avocado and brisket salad is great to make on a hot day. Have it as the side dish to a sandwich you make with one of the bread recipes or as a side to a chaffle burger. You\u2019re welcome!<\/p>\n\n\n\n

Rice Krispy Treat<\/h3>\n\n\n\n

To finish off this list of low carb recipes, I had to add something sweet. Dessert and sweet treats are possible with a low carb lifestyle. With the use of monkfruit and other natural sweeteners you can satisfy a sweet tooth and still keep the carb count low. <\/p>\n\n\n\n

All you\u2019ll need is a bag of sugar-free Max Mallow, HighKey protein cereal (I used the cocoa flavor), and your go-to chunky peanut butter. Melt the Max Mallows and peanut butter together, add the cereal, and empty it into a pan lined with parchment paper. Wait for it to cool before you cut it, and you\u2019re done.<\/p>\n\n\n\n

If you\u2019re having a hard time finding these items, go to each company\u2019s website, and you\u2019ll be able to find a store near you that carries them. Bring this treat to parties or just have them around the house for anyone with a sweet tooth.<\/p>\n\n\n\n

It\u2019s Time To Get Cookin\u2019!<\/h2>\n\n\n\n
